- 2 cups rice flour
- 1/2 cup all-purpose flour
- 1 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 4 large eggs
- 1 cup coconut milk
- 1/2 cup whole milk
- 1/2 cup melted butter
Toppings:
- 4 oz queso de bola or cheddar (sliced)
- 2 salted duck eggs (sliced)
- 1/4 cup softened butter
- Grated coconut
- Sugar for sprinkling
Method
Traditional method (banana leaf, clay pot):
- Line clay pot or pan with banana leaves
- Pour batter
- Bake 350°F, 25-30 minutes
- Add toppings, broil 2-3 minutes
Home method (no banana leaf):
- Preheat oven to 350°F
- Grease 8-inch cake pan (or muffin tins)
- Whisk dry ingredients
- In separate bowl, whisk eggs, coconut milk, milk, butter
- Combine wet and dry
