The recipe

Ingredients (makes 20)

Dumplings:

  • 1 cup milk powder
  • 1/4 cup flour
  • 1/4 tsp baking soda
  • 2 tbsp ghee (clarified butter)

Syrup:

  • 2 cups sugar
  • 2 cups water
  • 5 cardamom pods, crushed
  • 1 tbsp rose water
  • Pinch of saffron (optional)
  • 1 tbsp lemon juice (prevents crystallization)

For frying:

  • Oil or ghee for deep frying

Method

Syrup (do first, let cool):

  1. Combine sugar, water, cardamom in saucepan
  2. Bring to boil, simmer 5 minutes
  3. Stir in rose water, saffron, lemon juice
  4. Set aside (still warm but not hot)

Dumplings: 5. Combine milk powder, flour, baking soda 6. Rub in ghee until crumbly 7. Slowly add milk until soft dough forms 8. Knead gently 1 minute (don't overwork) 9. Cover and rest 10 minutes 10. Divide into 20 equal portions 11. Roll into smooth balls (no cracks)

Fry: 12. Heat oil to 300°F (not too hot) 13. Carefully add dumplings (batches of 5-6) 14. Fry slowly, turning constantly 15. Cook until deep golden brown (5-7 minutes) 16. Don't rush — slow fry expands inside

Soak: 17. Drain on paper towel briefly 18. Add to warm syrup immediately 19. Cover and soak at least 2 hours 20. Best after 4-6 hours
