The recipe
Ingredients (serves 4)
- 1 lb spaghetti or linguine
- 1/3 cup olive oil
- 6 garlic cloves, sliced
- 4-6 anchovy fillets (don't skip!)
- 1 tsp red pepper flakes
- 1 28 oz can San Marzano tomatoes
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup capers (drained)
- 1/4 cup chopped parsley
- Salt and pepper
- Optional: 1/4 cup white wine
Method
Make sauce:
- Heat olive oil in large pan
- Add garlic, cook gently (don't brown)
- Add anchovies (smash with spoon)
- They'll dissolve into oil
- Add red pepper flakes
Add tomatoes: 6. Crush tomatoes by hand into pan 7. Add white wine if using 8. Add olives and capers 9. Simmer 15-20 minutes (sauce thickens) 10. Season with salt and pepper (taste, anchovies salty)
Cook pasta: 11. Meanwhile, cook pasta in salty water 12. Al dente (1 minute less than package) 13. Reserve 1/2 cup pasta water before draining
Combine: 14. Add pasta to sauce 15. Toss vigorously 16. Add pasta water as needed 17. Stir in parsley 18. Drizzle with olive oil 19. Don't add cheese (Italian rule with seafood-flavored)
