Crust:
- 2 cups graham cracker crumbs (about 16 crackers)

Filling:
- 3 8 oz packages cream cheese, room temperature
- 1 cup sugar
- 1/2 cup brown sugar
- 4 large eggs, room temperature
- 1 15 oz can pumpkin puree
- 1 tbsp vanilla
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp salt
- 1/4 cup heavy cream
Optional topping:
- 1 cup sour cream
- 2 tbsp sugar
- 1 tsp vanilla
Method
Crust:
- Preheat oven to 350°F
- Mix crumbs, melted butter, sugar, cinnamon
- Press into 9-inch springform pan
- Bake 10 minutes
- Cool
Filling: 6. Beat cream cheese until smooth (no lumps!) 7. Add sugars, beat well 8. Beat in eggs one at a time 9. Mix in pumpkin, vanilla, spices, salt 10. Stir in cream 11. Pour over cooled crust
Bake (water bath important): 12. Wrap springform bottom and sides in foil 13. Place in larger pan 14. Pour hot water 1-inch up sides 15. Bake 60-75 minutes (edges set, center slightly jiggly) 16. Turn off oven, crack door 17. Cool in oven 1 hour 18. Then refrigerate at least 4 hours (overnight better)
Optional topping: 19. Mix sour cream, sugar, vanilla 20. Spread over cooled cheesecake 21. Bake additional 5 minutes 22. Cool before slicing
