The recipe
Ingredients
- 1 lb fresh chestnuts (in shell)
- Coarse salt (optional)
- Butter for serving (optional)
- Fresh thyme or rosemary (optional)
Method (oven)
- Preheat oven to 400°F
- With sharp knife, cut X on flat side of each chestnut
- Soak in cool water 30 minutes
- Drain, pat dry
- Place flat-side down on baking sheet
- Roast 20-25 minutes (shells peel back, nuts darken)
- Wrap in towel 5 minutes (steams loose shells)
- Peel while warm (essential)
Method (open fire)
- Cut X on each chestnut
- Place in chestnut roasting pan (special pan with holes)
- Hold over fire 15-20 minutes, shaking occasionally
- Shells will split, blacken slightly
- Peel and eat
Method (microwave - emergency)
- Cut X on each
- Soak 10 minutes in water
- Microwave on paper towel 5-7 minutes
- Peel while warm
