  • 1/2 cup grated Parmigiano-Reggiano
  • 1/4 cup chopped parsley
  • 2 tbsp fresh thyme
  • 1/4 cup cream cheese, softened
  • Salt and pepper
  • Olive oil for drizzling

Method

Prep mushrooms:

  1. Brush mushrooms clean (don't soak)
  2. Remove stems gently
  3. Reserve stems
  4. Place caps on baking sheet, gill-side up
  5. Brush caps with olive oil

Chop stems: 6. Finely chop reserved stems 7. Set aside

Make filling: 8. Brown sausage in skillet, breaking up 9. Add onion and chopped stems 10. Cook 5 minutes 11. Add garlic, cook 1 minute 12. Stir in breadcrumbs, Parmigiano, herbs 13. Off heat, mix in cream cheese 14. Season with salt and pepper

Fill: 15. Spoon filling into mushroom caps 16. Mound slightly 17. Sprinkle additional Parmigiano on top 18. Drizzle with olive oil

Bake: 19. Preheat oven to 400°F 20. Bake 20-25 minutes 21. Until golden, mushrooms tender 22. Filling bubbling
