- 1/3 cup sherry, brandy, or orange juice (for moistening)
- 1 cup raspberry or strawberry jam
Jelly layer:
- 2 packets red jelly (strawberry, raspberry)
- Prepared per package, slightly under-set
Custard layer:
- 2 cups heavy cream
- 1 cup whole milk
- 4 large egg yolks
- 1/2 cup sugar
- 1 tbsp vanilla
- 2 tbsp cornstarch
Or store-bought custard:
- Trifle-grade custard

Method
Custard (if making):
- Heat milk and cream gently
- Whisk yolks, sugar, cornstarch
- Slowly pour hot milk into yolks
- Return to pan, stir constantly
- Cook until thickened
- Strain into bowl
- Cool, refrigerate
Jelly: 8. Prepare per package 9. Pour into shallow pan 10. Refrigerate to set 11. Cut into cubes when set
Assembly: 12. Layer sponge in trifle bowl (cubed) 13. Drizzle with sherry or juice 14. Spread jam over sponge 15. Add jelly cubes 16. Pour custard over 17. Add fresh berries (top layer) 18. Repeat layers if bowl deep enough
Top: 19. Whip cream with sugar and vanilla 20. Spread over top 21. Garnish with mint and berries 22. Refrigerate at least 4 hours (overnight better)
