The recipe

Ingredients (serves 12)

Cake:

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter, room temp
  • 1 cup sugar
  • 5 large eggs, separated
  • 1 tsp vanilla
  • 1/3 cup milk

Three-milk mixture:

  • 1 14 oz can sweetened condensed milk
  • 1 12 oz can evaporated milk
  • 1 cup heavy cream

Topping:

  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla
  • Fresh berries (strawberries, raspberries)
  • Cinnamon (optional dusting)

Method

Cake:

  1. Preheat oven to 350°F
  2. Grease 9x13 pan
  3. Whisk dry ingredients
  4. Cream butter and sugar
  5. Beat in egg yolks one at a time
  6. Add vanilla, milk
  7. Mix in dry ingredients
  8. Beat egg whites to stiff peaks
  9. Fold whites into batter
  10. Pour into pan, bake 30-35 minutes
  11. Cool completely

Soak: 12. Whisk three milks together 13. Poke holes all over cake with fork 14. Slowly pour milk mixture over 15. Cover, refrigerate at least 4 hours (overnight better)

Serve: 16. Whip cream with sugar and vanilla 17. Spread over soaked cake 18. Top with berries 19. Dust with cinnamon if desired 20. Slice cold
