  3. Slowly pour hot milk into yolks, whisking constantly (tempering)
  4. Return to saucepan
  5. Cook over medium-low, stirring constantly, until thickened (170°F)
  6. Strain through fine sieve
  7. Stir in vanilla + bourbon
  8. Cool to room temp; refrigerate
  9. Age 1 week minimum; 3 weeks ideal
