The classic recipe (9-inch pie pan)
Crust
- 1 1/4 cups flour
- 1/2 teaspoon salt
- 1/2 cup cold butter
- 4-6 tablespoons ice water
Filling
- 6 large eggs
- 1 cup heavy cream
- 1/2 cup milk
- 1 1/2 cups grated Gruyère
- 1/2 lb cooked bacon (chopped)
- 1/2 cup chopped onion (sautéed)
- Salt; pepper; nutmeg
Method
- Make crust; chill 1 hour
- Roll out; place in pie pan
- Blind bake at 425°F for 15 min
- Whisk eggs + cream + milk + seasonings
- Spread bacon + onion + cheese in crust
- Pour egg mixture over
- Bake at 375°F for 35-45 min
- Cool slightly; serve
