The recipe (serves 4-6)

Ingredients

  • 1 large whole head cauliflower (3-4 lbs)
  • 1/3 cup olive oil
  • 2 tablespoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 lemons (juice + zest)
  • Fresh herbs (parsley; cilantro; dill)
  • A drizzle of tahini sauce (recipe below)

Tahini sauce

  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 2 tablespoons water
  • 1 garlic clove, minced
  • Salt + pepper

Method

  1. Preheat oven to 425°F
  2. Trim cauliflower leaves; leave whole head intact
  3. Submerge in salted water 5 minutes
  4. Pat dry
  5. Brush with olive oil; sprinkle salt + pepper + paprika + lemon zest
  6. Place in cast iron OR roasting pan
  7. Roast 45-60 minutes until deeply golden + tender (a knife slides in easily)
  8. Drizzle with tahini sauce; lemon juice; fresh herbs
  9. Serve whole; slice at the table

Variations

  • Curry-spiced: add 1 tablespoon curry powder
  • Cheesy: top with parmesan in last 10 minutes
  • Buffalo: brush with buffalo sauce in last 15 minutes
  • Romesco: serve with romesco sauce instead of tahini
