The recipe (Polish Wigilia style)

Method

  3. Cook 5 minutes
  4. Stir in tomato paste

Simmer: 5. Pour in vegetable stock 6. Add bay leaves, marjoram 7. Simmer covered 1 hour 8. Vegetables tender

Strain (clear borscht style): 9. Strain through fine sieve 10. Discard solids (or reserve for separate dish) 11. Clear ruby liquid result 12. This is Wigilia traditional

Or blend (creamy version):

  • Use immersion blender
