The recipe (Polish Wigilia style)
Ingredients (serves 8)
- 6 medium beets, peeled and chopped
- 1 large onion, chopped
- 4 garlic cloves
- 2 carrots, chopped
- 1 parsnip, chopped
- 8 cups vegetable stock (Christmas Eve - no meat)
- 2 tbsp tomato paste
- 2 bay leaves
- 1 tsp dried marjoram
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup vinegar (apple cider or white)
- 1 tbsp lemon juice
- Optional: 1 tbsp honey
Method
Build flavor:
- In large pot, sauté onion and garlic in oil
- Add beets, carrots, parsnip
- Cook 5 minutes
- Stir in tomato paste
Simmer: 5. Pour in vegetable stock 6. Add bay leaves, marjoram 7. Simmer covered 1 hour 8. Vegetables tender
Strain (clear borscht style): 9. Strain through fine sieve 10. Discard solids (or reserve for separate dish) 11. Clear ruby liquid result 12. This is Wigilia traditional
Or blend (creamy version):

Finish: 13. Return liquid to pot 14. Add vinegar, lemon juice (balances earthiness) 15. Add honey if using 16. Salt and pepper to taste
