The recipe
Ingredients (serves 6-8)
Cabbage:
- 1 large head cabbage
- Pot of boiling water (large)
Filling:
- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup cooked rice (cooled)
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 large egg
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 2 tbsp chopped parsley
Sauce:
- 2 28 oz cans crushed tomatoes
- 1 cup chicken or beef broth
- 2 tbsp brown sugar
- 1 tbsp Worcestershire
- 1 bay leaf
- 1 tsp paprika
- Salt and pepper
Method
Prep cabbage:
- Core cabbage from bottom
- Bring large pot of water to boil
- Submerge cabbage 5 minutes
- Lift out, peel off outer softened leaves
- Re-submerge if more leaves needed
- Get 12-15 large leaves
- Trim thick spine of each leaf
Prep filling: 8. Sauté onion 5 minutes 9. Combine with ground meats, cooked rice, garlic, egg, seasonings 10. Mix gently (don't overwork)
Assembly: 11. Place leaf flat, stem end toward you 12. Add 1/3 cup filling to center 13. Fold sides over, then roll up tightly 14. Place seam-down in pot
Sauce: 15. Mix all sauce ingredients 16. Reserve some for top
Cook: 17. Layer cabbage rolls in large pot 18. Pour sauce over (cover them) 19. Add reserved cabbage leaves on top 20. Cover pot 21. Simmer gently 1.5-2 hours 22. Or bake covered 325°F same time
Serve: 23. Plate 2-3 per person 24. Spoon sauce over 25. Sour cream on side 26. Dill garnish 27. Crusty bread alongside
