Chocolate sponge:

  • 6 large eggs, separated

Cream filling:

  • 2 cups heavy cream
  • 1/3 cup powdered sugar
  • 1 tsp vanilla
  • 2 tbsp cocoa powder (optional, for chocolate cream)

Chocolate ganache:

  • 8 oz dark chocolate, chopped
  • 1 cup heavy cream
  • 2 tbsp butter

Decorations:

  • Powdered sugar (snow effect)
  • Meringue mushrooms (traditional)
  • Rosemary sprigs (pine boughs)
  • Cranberries (red berries)
  • Holly leaves (optional, real or marzipan)

Method

Sponge cake:

  1. Preheat oven to 350°F
  2. Line jelly roll pan (10x15) with parchment, grease
  3. Whip egg yolks with 1/2 cup sugar until thick, pale (5 min)
  4. Beat in vanilla
  5. Sift cocoa, flour, salt over yolks; fold gently
  6. Whip egg whites to soft peaks
  7. Gradually add remaining 1/4 cup sugar; whip to stiff peaks
  8. Fold whites into chocolate mixture (3 additions)
  9. Spread evenly in pan
  10. Bake 12-15 minutes (springs back to touch)

Roll the cake (critical): 11. Dust clean kitchen towel with powdered sugar 12. Turn warm cake onto towel 13. Peel off parchment 14. Roll up cake WITH the towel (lengthwise) 15. Let cool completely rolled

Cream filling: 16. Whip cream, sugar, vanilla, cocoa to stiff peaks 17. Unroll cooled cake gently 18. Spread cream evenly to edges 19. Re-roll cake (without towel this time) 20. Place seam-side down

Ganache: 21. Heat cream just to simmer 22. Pour over chopped chocolate 23. Let sit 2 minutes, then whisk 24. Stir in butter 25. Cool to spreading consistency (30-45 min)

Decorate: 26. Trim ends of cake (eat the trimmings) 27. Cut diagonal piece from one end (looks like cut branch) 28. Position branch piece on top of log 29. Cover entire log with ganache 30. Use fork to create "bark" texture 31. Dust with powdered sugar (snow) 32. Decorate with rosemary, meringue mushrooms, cranberries
