The recipe
Ingredients (serves 10)
Vanilla sponge:
- 6 large eggs, separated
- 3/4 cup sugar, divided
- 1 tbsp vanilla
- 1/2 cup flour
- 2 tbsp cornstarch
- Pinch of salt
Mocha cream filling:
- 2 cups heavy cream
- 1/3 cup powdered sugar
- 2 tbsp instant espresso powder
- 1 tsp vanilla
Chocolate ganache:
- 8 oz dark chocolate, chopped
- 1 cup heavy cream
- 2 tbsp butter
Decorations:
- Powdered sugar
- Meringue mushrooms (optional)
- Rosemary sprigs
- Cranberries
Method
Vanilla sponge:
- Preheat oven to 350°F
- Line jelly roll pan (10x15) with parchment, grease
- Whip egg yolks with 1/2 cup sugar until thick, pale (5 min)
- Beat in vanilla
- Sift flour, cornstarch, salt; fold gently
- Whip egg whites to soft peaks
- Gradually add remaining 1/4 cup sugar; whip to stiff peaks
- Fold whites into yolk mixture (3 additions)
- Spread evenly in pan
- Bake 12-15 minutes (springs back to touch)
Roll the cake: 11. Dust clean towel with powdered sugar 12. Turn warm cake onto towel 13. Peel off parchment 14. Roll up cake WITH towel (lengthwise) 15. Cool completely rolled
Mocha cream filling: 16. Dissolve espresso powder in 1 tbsp hot water 17. Whip cream, sugar, dissolved espresso, vanilla to stiff peaks 18. Unroll cooled cake gently 19. Spread cream evenly to edges 20. Re-roll cake (without towel) 21. Place seam-side down
Ganache: 22. Heat cream just to simmer 23. Pour over chopped chocolate 24. Let sit 2 minutes, whisk smooth 25. Stir in butter 26. Cool to spreading consistency (30-45 min)
Decorate: 27. Trim ends of cake 28. Cut diagonal piece from one end (looks like cut branch) 29. Position branch piece on top of log 30. Cover entire log with ganache 31. Use fork to create "bark" texture 32. Dust with powdered sugar 33. Decorate with rosemary, cranberries
