Method

Mix gently:

  1. Pick through crabmeat (remove any shell)
  2. Place crabmeat in bowl

Make binder: 3. In separate bowl, whisk egg, mayo, Dijon, Old Bay, Worcestershire, lemon, salt, pepper 4. Mix well

Combine: 5. Pour binder over crab 6. Sprinkle panko 7. Add parsley 8. Mix VERY GENTLY (preserve lumps) 9. Don't overmix or break up

Form: 10. Divide into 8 equal portions 11. Gently form into round cakes 12. About 3 inches across, 1 inch thick 13. Place on parchment-lined baking sheet 14. Refrigerate 30 minutes (firms up)

Cook: 15. Heat oil and butter in heavy skillet 16. Medium-high heat 17. Carefully place 4 crab cakes (don't crowd) 18. Cook 4 minutes per side (golden brown) 19. Don't move them while cooking (sets the crust) 20. Internal temp 145°F when done
