Ingredients (makes 24)
Bread:
- 1 baguette, sliced 1/2 inch thick
- 3 tbsp olive oil
- 3-4 garlic cloves, peeled
Tomato topping:
- 4 cups diced tomatoes (Roma or cherry)
- 1/4 cup olive oil
- 3 tbsp fresh basil, chopped
- 2 garlic cloves, minced
- 1 tbsp balsamic vinegar
- Salt and pepper
- Pinch sugar (if tomatoes not perfectly ripe)
Method
Toast bread:
- Preheat oven to 400°F
- Brush bread slices with olive oil both sides
- Place on baking sheet
- Toast 5-8 minutes until golden
- While warm, rub each with cut garlic clove
- (Garlic absorbs into bread - magical)
Make tomato topping: 7. Combine diced tomatoes, olive oil, basil, garlic, balsamic 8. Salt and pepper 9. Pinch sugar if needed 10. Let sit 15 minutes (flavors meld)
Top and serve: 11. Spoon topping onto toasted bread 12. Just before serving (bread soggy if early) 13. Drizzle additional olive oil 14. Crack of pepper 15. Serve immediately
