The recipe
Ingredients (serves 12)
Sponge cake:
- 4 large eggs
- 3/4 cup sugar
- 1 tsp vanilla
- 1 cup flour
- 1/4 tsp salt
Ricotta filling:
- 2 cups whole-milk ricotta
- 1/2 cup powdered sugar
- 1 tsp vanilla
- 1/4 cup mini chocolate chips
- 1/4 cup chopped candied citron
Marzipan exterior:
- 1 1/2 cups almond paste
- 2 tbsp powdered sugar
- Green food coloring (traditional)
Glaze and decoration:
- 2 cups powdered sugar
- 3-4 tbsp water
- Candied fruit pieces (orange, citron, cherry)
- Silver dragees (optional)
Method
Sponge cake:
- Preheat oven to 350°F
- Beat eggs and sugar until light, 5 minutes
- Beat in vanilla
- Sift flour and salt over eggs
- Fold in gently
- Pour into 9-inch round greased pan
- Bake 25-30 minutes (toothpick clean)
- Cool completely
Ricotta filling: 9. Drain ricotta overnight in cheesecloth 10. Beat ricotta and powdered sugar until smooth 11. Add vanilla 12. Fold in chocolate chips and citron
Assembly: 13. Slice cooled cake horizontally into 3 layers 14. Place bottom layer on plate 15. Spread half the ricotta filling 16. Place middle layer 17. Spread remaining ricotta 18. Top with last layer 19. Refrigerate 1 hour
Marzipan exterior: 20. Knead marzipan with powdered sugar 21. Add green food coloring (traditional) 22. Roll into large circle 23. Drape over cake, smoothing sides 24. Trim excess
Glaze and decorate: 25. Mix powdered sugar and water for thick glaze 26. Spread over top in decorative pattern 27. Arrange candied fruit in patterns 28. Refrigerate until ready to serve
