Ingredients (serves 6)
- 6 boneless skinless chicken breasts (or thighs)
- 1/2 cup flour
- Salt and pepper
- 4 tbsp butter, divided
- 2 tbsp olive oil
- 1 lb cremini or button mushrooms, sliced
- 4 garlic cloves, minced
- 1 cup Marsala wine (sweet or dry)
- 1 cup chicken broth
- 1/4 cup heavy cream
- 2 tbsp parsley, chopped
- Fresh thyme
Method
Prep chicken:
- Pound chicken to 1/2 inch thick (even cooking)
- Season with salt and pepper
- Dredge in flour, shake off excess
Sear chicken: 4. Heat 2 tbsp butter + olive oil in large skillet 5. Cook chicken 3-4 minutes per side 6. Until golden, internal 165°F 7. Transfer to plate, cover
Make sauce: 8. Same skillet, add remaining 2 tbsp butter 9. Add mushrooms, cook 8-10 minutes 10. Let liquid release, then dry 11. Until golden brown 12. Add garlic, cook 1 minute
Deglaze: 13. Pour in Marsala 14. Scrape bottom (browned bits = flavor) 15. Reduce by half (5 minutes)
Build sauce: 16. Add chicken broth 17. Simmer 5 minutes 18. Stir in cream 19. Add thyme 20. Season with salt and pepper 21. Sauce should coat back of spoon
Finish: 22. Return chicken to skillet 23. Simmer 5 minutes (warm through, sauce absorbs) 24. Sprinkle parsley 25. Serve immediately
