Eggs Benedict is elegant Christmas brunch — poached eggs on Canadian bacon and English muffin, smothered in hollandaise. Restaurant-quality at home.
The recipe
Ingredients (serves 4)
Poached eggs:
- 8 large eggs (very fresh!)
- 1 tbsp white vinegar
- 1 tbsp salt
- Water for poaching
Hollandaise sauce:
- 3 large egg yolks
- 1 tbsp lemon juice
- 1/2 cup butter, melted
- Salt and pepper
- Pinch cayenne (optional)
Assembly:
- 4 English muffins, split and toasted
- 8 slices Canadian bacon (or ham), warmed
- Fresh chives or parsley for garnish
Method
Hollandaise sauce (blender method - easy):
- Place yolks in blender with lemon juice
- Blend on high
- Slowly drizzle melted butter while blending
- Should emulsify thick
- Add salt, pepper, cayenne
- Keep warm (don't let cool/break)
Or traditional (more skill):
- Whisk yolks and lemon over double boiler
- Slowly add melted butter while whisking
- Don't break (low heat!)
- More controlled but harder

Poach eggs: 6. Bring water to simmer (not boil) 7. Add vinegar and salt 8. Create gentle whirlpool 9. Crack egg into whirlpool 10. Cook 3 minutes (runny yolk) 11. Remove with slotted spoon 12. Drain briefly 13. Repeat for each egg
