The recipe

Ingredients (serves 8)

Pastry:

  • 2 sheets puff pastry (or homemade), 9-inch rounds

Almond frangipane:

  • 1 cup almond flour
  • 1/2 cup powdered sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 tsp vanilla
  • 1 tbsp rum (optional)

Egg wash:

  • 1 egg yolk
  • 1 tbsp milk

Special:

  • 1 fève (small porcelain figure, dried bean, or whole almond)

Method

Frangipane:

  1. Cream butter and powdered sugar until light
  2. Beat in eggs one at a time
  3. Mix in almond flour, vanilla, rum
  4. Refrigerate 30 minutes

Assembly: 5. Place one puff pastry round on parchment-lined baking sheet 6. Pile frangipane in center, leaving 1-inch border 7. PLACE FÈVE somewhere in frangipane 8. Brush border with water 9. Place second pastry on top 10. Press edges to seal 11. Crimp edges decoratively (curve scallops, fork marks)

Decorate top: 12. Cut small steam hole in center 13. Score decorative pattern on top (rosette, sun rays, lines) 14. Don't cut through pastry 15. Refrigerate 30 minutes (helps puff)

Bake: 16. Preheat oven to 400°F 17. Brush with egg wash 18. Bake 25-30 minutes until deeply golden 19. Cool on rack
