Method
Prep tenderloin:
- Remove silver skin (tough membrane)
- Slip knife under, remove
- Pat dry with paper towels
Marinade (do 30 min - 4 hours ahead): 4. Combine olive oil, Dijon, garlic, herbs, salt, pepper, brown sugar 5. Rub all over tenderloins 6. Let sit at room temp 30 minutes 7. Or refrigerate up to 4 hours
Sear: 8. Preheat oven to 400°F 9. Heat oven-safe skillet over high heat 10. Add 1 tbsp oil 11. Sear tenderloins on all sides (golden brown) 12. About 2 minutes per side
Roast: 13. Transfer skillet to oven 14. Roast 15-20 minutes 15. Internal temp 145°F (medium) 16. Don't overcook!
Glaze (optional): 17. Meanwhile, simmer glaze ingredients 18. Reduce to syrupy consistency 19. Brush over tenderloin last 5 minutes 20. Or serve drizzled
Rest: 21. Tent with foil 22. Rest 10 minutes 23. Slice 1/2 inch thick 24. Plate beautifully
