The recipe
Ingredients (serves 6)
Filling:
- 2-3 cups cooked roast meat, finely chopped (lamb is traditional, beef works for "cottage pie")
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup frozen peas
- 2 tbsp tomato paste
- 1 tbsp Worcestershire
- 1/2 cup beef or lamb broth
- 2 tbsp flour
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper
Mashed potato topping:
- 2 lbs Yukon Gold potatoes
- 1/2 cup butter
- 1/2 cup heavy cream
- 1 egg yolk
- Salt to taste
- Optional: 1/2 cup grated cheddar
Method
Potato topping:
- Peel and cube potatoes
- Boil in salted water until tender
- Drain, mash
- Stir in butter, cream, yolk
- Season generously
Filling: 6. Sauté onion, carrots, celery in butter 7. Sprinkle flour over, stir 1 minute 8. Add tomato paste, Worcestershire, broth 9. Stir in chopped roast meat 10. Add herbs, salt, pepper 11. Stir in frozen peas (don't cook through)
Assembly: 12. Spread meat mixture in baking dish 13. Top with mashed potatoes 14. Spread evenly, fluff with fork (for crispy top) 15. Sprinkle cheese if using 16. Dot with butter
Bake: 17. Bake 375°F for 30-35 minutes (golden, bubbling) 18. Broil last 2 minutes for crispy top 19. Rest 10 minutes before serving
