- 3 garlic cloves, minced
- 1/3 cup flour
- 2 cups turkey or chicken stock
- 1 cup heavy cream or milk
- 3 cups cooked turkey, shredded
- 1 cup frozen peas
- 2 tsp fresh thyme
- 1 tsp fresh sage
- Salt and pepper to taste
- 1 tbsp Dijon mustard (optional, adds depth)
Method
Filling:
- Melt butter in large pot
- Sauté onion, carrots, celery 8 minutes
- Add mushrooms if using, cook 5 minutes
- Add garlic, cook 1 minute
- Sprinkle flour, stir 2 minutes (cook off raw taste)
- Slowly whisk in stock
- Add cream
- Simmer until thickened, 5 minutes
- Stir in turkey, peas, herbs
- Add Dijon if using
- Season with salt and pepper
