Ingredients (serves 4)
- 2 lbs leftover roasted potatoes (or 1.5 lbs raw, cubed)
- 3 cups leftover turkey, shredded
- 1 large onion, diced
- 2 bell peppers, diced (one red, one green for color)
- 4 tbsp butter or duck fat (or oil)
- 4 garlic cloves, minced
- 2 tsp fresh thyme
- 1 tsp paprika
- Salt and pepper to taste
- 4 eggs (one per serving)
- Fresh chives or parsley for garnish
Method
Crispy hash:
- If using raw potatoes, parboil 5 minutes, drain well
- Heat butter in large cast-iron skillet
- Add potatoes (single layer if possible)
- Cook UNDISTURBED 5-7 minutes (let crust form)
- Flip, cook another 5-7 minutes
- Push to side
- Add onions and peppers, cook 5 minutes
- Add garlic, cook 1 minute
- Stir in shredded turkey, thyme, paprika
- Mix everything together, cook 3-5 more minutes
- Season with salt and pepper
