The recipe
Ingredients (serves 6-8)
- 10 large eggs
- 1/2 cup whole milk
- 1/2 cup grated Parmigiano-Reggiano
- 2 tbsp olive oil
- 1 large onion, diced
- 4 garlic cloves, minced
- 4 cups vegetables (see variations)
- 1 cup shredded mozzarella or other cheese
- 2 tbsp fresh herbs (parsley, basil, thyme)
- Salt and pepper
Method
Prep:
- Preheat oven to 350°F
- Use 10-12 inch cast iron skillet (oven-safe!)
Cook vegetables: 3. Heat oil in skillet 4. Sauté onion 5 minutes 5. Add garlic, cook 1 minute 6. Add vegetables, cook until tender 7. Drain excess moisture if any
Egg mixture: 8. Whisk eggs and milk 9. Add Parmigiano 10. Add herbs 11. Salt and pepper
Combine: 12. Pour egg mixture over vegetables 13. Sprinkle mozzarella on top 14. Don't stir after pouring
Cook: 15. Cook on stove 3-4 minutes (edges set) 16. Transfer to oven 17. Bake 15-20 minutes 18. Center should be just set (slight jiggle) 19. Don't overcook (rubber)
Serve: 20. Rest 5 minutes 21. Cut into wedges 22. Garnish with fresh herbs 23. Crusty bread alongside
