The recipe
Ingredients (serves 8-10)
- 10 oz package frozen spinach, thawed and squeezed dry
- 14 oz can artichoke hearts, drained and chopped
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 cup grated Parmigiano-Reggiano
- 1 cup shredded mozzarella
- 4 garlic cloves, minced
- 1/2 tsp red pepper flakes
- Salt and pepper
- Lemon juice (squeeze)
Method
Squeeze spinach:
- Thaw spinach completely
- Squeeze in towel until very dry
- This is critical (watery dip = bad)
Mix: 4. In large bowl, combine cream cheese, sour cream, mayo 5. Add garlic, red pepper flakes 6. Stir in spinach (broken up) 7. Add chopped artichokes 8. Mix in cheeses 9. Salt and pepper to taste 10. Squeeze of lemon
Bake: 11. Transfer to oven-safe baking dish 12. Bake 375°F for 20-25 minutes 13. Bubbling and golden on top 14. Internal temp 165°F
