- 12 large egg yolks
- 12 large egg whites
- 1 lb powdered sugar

- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground allspice
- 1/2 tsp ground cloves
- 1 tsp vanilla
- 1/4 cup rum (optional)
Method
- Beat egg yolks until thick and pale
- Slowly add powdered sugar
- Beat until ribbon stage
- Add spices, vanilla, rum if using
Whip whites separately: 5. Beat egg whites with cream of tartar 6. Whip to stiff peaks 7. Salt added
Combine: 8. Fold whites into yolk mixture 9. Gently, maintain volume 10. Store in jar, refrigerate 11. Lasts 1 week
