Honey glazed carrots are the bright color side that completes any Christmas plate. Done right with butter, honey, fresh herbs, and a touch of acid — they're spectacular.
The classic recipe
Ingredients (serves 6-8)
- 2 lbs carrots, peeled and cut on bias (2-inch pieces)
- 3 tablespoons butter
- 3 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon fresh thyme leaves
- Salt; pepper
- Fresh parsley, chopped (garnish)
Method
- Bring large pot of salted water to boil
- Cook carrots 5-7 minutes until barely tender
- Drain; reserve 1/4 cup cooking water
- In a large skillet, melt butter over medium
- Add honey + Dijon; whisk smooth
- Add carrots; toss to coat
- Add reserved water + thyme + salt + pepper
- Simmer 3-5 minutes until glaze thickens
- Finish with vinegar (brightens)
- Garnish with parsley
