Ingredients
- 6 firm pears (Bosc; Anjou)
- 1 bottle red wine (or white wine for lighter version)
- 1 cup sugar
- 1 cinnamon stick
- 4 cloves
- 1 vanilla bean (or 1 teaspoon extract)
- Zest and juice of 1 orange
- 1 star anise (optional)
Method
- Peel pears; leave stems on
- In large pot, combine wine + sugar + spices + orange zest and juice
- Bring to simmer
- Add pears (should be mostly submerged)
- Simmer 20-25 minutes until tender (knife slides in)
- Remove pears; set aside
- Reduce poaching liquid to syrup (about 15 min)
- Serve pears drizzled with syrup
- Pair with mascarpone or vanilla ice cream
