Winter gourmands are the dominant fragrance category from October through February. They are warm, edible-feeling scents — vanilla, tonka, praline, caramel, coffee, chestnut — that read as cosy rather than literal. Done well, they smell expensive. Done poorly, they smell like a candle shop.

This is the guide to doing it well.

What makes a gourmand "winter"

Three things separate a winter gourmand from a generic sweet fragrance:

  1. Warmth materials — tonka bean, benzoin, labdanum, amber accord
  2. Spice or smoke — cinnamon, clove, cardamom, or a touch of smoky wood
  3. Restraint — gourmands need a sober non-sweet element (wood, leather, smoke) so they don't collapse into sugar

If a fragrance is just vanilla on its own, it's a candle. If it's vanilla + tonka + a wisp of smoke + amber, it's a winter signature.

Vanilla-tonka builds

Notes: Vanilla, tonka bean, benzoin, amber

Best for: Daily wear from November through February

Shop

The most reliable winter category. Tonka adds an almond-coumarin sweetness that makes vanilla feel grown-up. Almost universal appeal — works as a gift to anyone who already wears anything sweet.

The praline / chocolate family

Praline accord is praline-flavored: roasted hazelnut + caramelized sugar. Modern fragrance has perfected this — it doesn't smell food-like up close, but signals warmth across a room.

  • Praline + rose — feminine winter signature
  • Praline + cocoa absolute — darker, more "chocolate"
  • Praline + tobacco — surprising, very gift-able to a sophisticated wearer

The cherry family (the 2026 winner)

Tom Ford's Lost Cherry kicked off this category and the market is now flooded with interpretations. The best builds use cherry as the top note, then warm woods and tonka for the dry-down.

Amarena Cherry

Notes: Cherry liqueur, almond, tonka, sandalwood, vanilla

Best for: Evening wear, statement gifts

Shop

Fragrenza's Amarena Cherry is the closest interpretation of Lost Cherry we've smelled — a boozy cherry top note that softens into almond and warm woods, finishing with creamy vanilla. The cherry is recognizable but never artificial.

The smoke family

For people who think gourmands are too sweet, smoke-based winter fragrances are the answer. These are dark, dry, gourmand-adjacent compositions.

  • Smoke + leather — masculine, evening
  • Smoke + incense + amber — sophisticated, gender-neutral
  • Smoke + birch tar — for the wearer who already loves Tauer Perfumes

How to wear a winter gourmand

  1. Sprayed on clothing, not skin — the projection lasts longer
  2. One spray on the chest, one on the back of the neck — never on the wrists
  3. Don't layer with another gourmand — pick one
  4. Pair with a wool sweater — gourmands cling to natural fibers
Tip

The trick to winter gourmands is "less than you think." Most wearers over-spray. Two well-placed sprays produces a beautiful trail; six produces a cloud nobody wants to share an elevator with.
